LIS and SIS table will get updated only if statistics check box have been activated for the key figure values (ie: S263)

Then there are update rules which also provide the guidelines to update these LIS tables for Sales/Delivery LIS.

PS: By far as per my recommendation, using this S263 Sales/Delivery LIS table is the best for tracking Open Quantity to be delivered against Sales Order after partial deliveries have been performed.

This is LIS/SIS table is unlike any other SAP info-structure tables mentioned in the SAP forum discussion which the tables (ie: VBBE, VBAP) on the open quantity to be delivered are not updated in real-time.
